2 # ground beef [I use 1 # beef and 1# beef chorizo(you can also substitute chicken etc.)]
2 env. taco seasoning (if using seasoned chorizo I do not add this)
2-4 C shredded colby jack cheese
16 large flour tortillas
Brown meat and add seasoning. Preheat a griddle or large frying pan (I can put 2 on my griddle, much quicker). I don't grease my griddle. Assemble quesadillas: spoon filling onto a tort and spread out to edges. Sprinkle cheese on top and put another tort on top of this. Put them on the griddle until browned and turn over. It works well if you place a paper plate on top when you lift the quesadilla, then flip the plate over and slide the tort onto the pan to brown the other side. Serve hot with salsa, sour cream...etc. I have also used black olives and black beans in my filling. Experiment, it's fun! Yummy!!
