1/4 cup cold water
1 quart strawberries
4 Tbsp. lemon juice
1 cup sugar
3 Tbsp. cornstarch
1 cup heavy cream
Wash berries before hulling, saving best ones for garnish. Crush them using a pastry blender, or potato masher. Combine cornstarch with lemon juice and water and add to strawberry mixture. Cook over low heat, stirring constantly until mixture has thickened and becomes transparent. Add remaining berries, which have been cut in half. Fold in gently. Pour into baked pastry shell. Chill in refrigerator. Before serving whip the cream and spread over top of pie. Garnish with whole berries.
