Preheat oven to 350
2 cups flour
2 eggs
1 tsp. cinnamon
1 cup cooking oil
1 tsp. baking soda
1 tsp. vanilla
1/2 tsp. baking powder
2 cups uncooked grated zucchini (peeled or unpeeled)
1/4 tsp. salt
1/2 cups chopped nuts (optional)
Grease & flour 2 bread pans. Mix all ingredients together, pour equal amounts and bake 1 hour.
