Cook over low heat, stirring constantly until mixture has thickened and becomes transparent. Add remaining berries, which have been cut in half. Fold in gently. Pour into baked pastry shell. Chill in refrigerator. Before serving whip the cream and spread over top of pie. Garnish with whole berries.

My Grandma's Gooseberry Pie

Almond pastry for 2-crust pie
3 cups fresh gooseberries
1-1/2 cup sugar
3 Tbsp. quick cooking tapioca
1/8 tsp. salt
2 Tbsp. butter or margarine

Crush 3/4 cup gooseberries and add to sugar, tapioca and salt. Drain most of the water off. Add enough milk and flour to thicken like a gravy. (My Grandma never measured and I usually don't either, so you will just have to guess here). Tear bread or biscuits on plate. Ladle potatoes on top and put toppings on. This is a very filling meal. I haven't made it for a while, but I still love it!

Simple Beef Manhattans

This is my rendition of Beef Manhattans. Assemble quesadillas: spoon filling onto a tort and spread out to edges. Sprinkle cheese on top and put another tort on top of this. Put them on the griddle until browned and turn over. It works well if you place a paper plate on top when you lift the quesadilla, then flip the plate over and slide the tort onto the pan to brown the other side.
